Scott and Company* “Our favorite is probably a Beaufort stew, especially for the cold weather games.  It is so easy as you basically just boil corn on the cob, red potatoes, sausage, and shrimp in a big pot with a ton of Old Bay seasoning. Then you just need some butter for the corn and potatoes and cocktail sauce for the shrimp once it’s all done cooking!” **Smoked Queso Dip** *by: Viktoria Izakova, In Charge - Scott and Company* Viktoria says this \*Smoked Queso Dip recipe is pretty good to eat whether tailgating or not. In advance brown chorizo, ground beef, or turkey (she prefers chorizo or ground turkey). Add the cooked meat to a disposable foil pan with fresh diced pickled jalapeno, diced onions (white or yellow), minced garlic, Rotel canned tomatoes with green chili - if you like spicy, and cubed Velveeta and Pepper Jack cheese. Preheat grill to 200-250 degrees and place the queso dip mixture on and let it cook for 2 hours, stirring occasionally so it doesn’t burn on the bottom. Serve with tortilla chips. \*For smoked dip use a pellet smoker. With a nice kick, this dish will liven up any tailgate: - 2 cans drained fiesta corn - 2 cups mayo - 1 cup parmesan cheese - 1 cup Monterrey Jack cheese - 1/4 to 1/2 cup chopped jalapenos Bake 350 for 25/30 minutes and serve with extra large Frito scoops **Layered Taco Dip** *By: Julie Chavis, Office Manager* This classic taco dip recipe is a definite tailgate crowd pleaser Ingredients: - 1 can of El Paso Refried beans - (Optional) 3 avocados smashed with lemon juice, salt & pepper, & tabasco to taste - 16 oz.
